Christmas Cookie Recipe

Here at Victoria Emerson, we’re in full holiday mode. The decor is up, the Christmas movies are on, and most importantly… the Christmas baking has begun! I think we can all agree that one of the best parts of the holidays is all the treats we get to enjoy. So to share some of that joy, we thought we’d pass along a fave cookie recipe of ours.

Trust us, when we brought these into the office, everyone was obsessed. They were described as comfort cookies and quote "If it were a giant bed, I'd sleep in it".

Here are our Brownie Hot Chocolate Cookies:

Holiday hot cocoa cookie recipe



  • 1/2 cup unsalted butter
  • 1 1/2 cups semi-sweet chocolate
  • 1 1/2 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 1/4 cups brown sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 20 large marshmallows cut in half
    (you'll need half a marshmallow for each cookie)
  • 1/4 cup unsalted butter
  • 1/2 cup semi-sweet chocolate


    melt the chocolate

    Step 1: Melt your chocolate

    In a bowl, add your chocolate and butter. Put them in the microwave for 10-20 secs increments, mixing occasionally until completely melted and combined. Set it aside to cool down.


    *Hot tip: You can use baking chocolate, chocolate chips, bars of chocolate, whatever you have on hand or can get your hands on! If you're using thicker chunks of chocolate, give it a quick blast to start the melt process on it's own. Butter will melt a lot quicker and could bubble over if you try to melt them at the same time

    Step 2: Combine your dry ingredients

    Take all the dry ingredients, flour, baking powder, cocoa powder, salt and whisk it together in a small bowl. 


    Step 3: Combine your wet ingredients

    Grab a bigger bowl and mix your eggs, sugar, and and vanilla together until completely combined. Then add in your melted chocolate and mix. For this part we recommend using an electric mixer on low to give that whisking arm a break.

    Step 4: Bring the wet and dry ingredients together

    Now it's time to bring it all together! Take your dry ingredients and slowly add them to the bowl with wet ingredients while mixing. You want to mix everything together until it's JUST combined.


    *Hot Tip: Once all combined, it should remind you of brownie batter! It's ok that it'll be runny and gooey looking.

    chill your batter for at least an hourStep 5: Time to chill 

    Here comes the easiest part. Pop the bowl of batter in the fridge to chill for at least an hour. The dough can even be chilled over night if you need more time. Just make sure it has about 30 min to warm up before you start working with it again.


    Step 6: Start your oven

    Once your hour of chilling is up, preheat the oven to 325 F. While the oven is heating up, grab your batter from the fridge, scoop out tablespoon sized portions and roll them into a ball. Add each ball to a cookie sheet with enough room for some spreading and gently push down to flatten a bit.


    Hot Tip: As the batter warms up both in the bowl and in your hands, things are going to get sticky. Have some warm water running or a towel ready to wipe your hands. You can make around 10 cookies before it'll be to sticky to shape. Put the batter back in the fridge to cool it down again.

    Step 7: Bake!

    Once your cookie sheet is ready to go, put it in the oven for around 12 min (give or take depending on your oven). While baking, take this time to cut all your marshmallows in half.


    Step 8: Bring on the marshmallows

    When the timer is up, pull out your cookies and push one halved marshmallow into the top of each cookie. The cookies should be nice and gooey at this point so they should sink right in. Put in them back in the oven for 2-3 min or until the marshmallows start to brown on top.

    Step 9: Top it all off

    While the cookies are cooling on the baking sheet, melt and mix up the chocolate and butter icing. Once completely cooled, dip or drizzle the chocolate on top for the final touch.


    Hot Tip: If you plan on using the same baking sheet for another batch, we would recommend moving the cookies to another plate or cooling rack before adding the chocolate icing to avoid a messy baking sheet. If you use a drying rack, make sure to put something under it to catch all the chocolate drips so it doesn't end up all over your counter!
